Spelt Pumpkin Bread (Hildegard Inspired)
- 1 ½ cups spelt flour
- 1 teaspoon baking soda
- 1 teaspoon ground nutmeg
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cloves
- ½ teaspoon baking powder
- ½ teaspoon salt
- 4 eggs
- 1 cup white sugar
- ¼ cup light brown sugar
- ½ teaspoon vanilla extract
- ¾ cup canned pumpkin
- ¾ cup applesauce
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease a 8-1/2×4-1/2-inch loaf pan.
- Mix flour, baking soda, nutmeg, cinnamon, cloves, baking powder, and salt together in a large bowl.
- Beat eggs, white sugar, brown sugar, and vanilla extract in a separate large bowl until smooth. Stir in pumpkin and oil. Add spelt flour mixture. Mix until batter is blended and smooth.
- Pour batter into the greased pan. Tap to get air bubbles out.
- Bake in preheated oven until the top is dark brown and a toothpick (or knife) in the center comes out clean, about 75 minutes. Let cool in the pan, about 15 minutes. Transfer to a wire rack or serving plate. Slice as you like, and enjoy 🙂
